Bitter Chocolate Cinnamon Bread

This is one of those breads that is deceptively addictive. The bitter chocolate and cinnamon invoke the essence of Mexican chocolate, while the bread has enough sweetness to it that it all melds together in seamless harmony.

Ingredients:

  • 2 1/2 c all purpose flour

  • 1/3 c canola oil

Add the wet to the dry, mixing gently, but not too much. Your bread will be tough if you overmix the batter. Once this is done, pour half the batter into your baking pan, and sprinkle with most of the spice-sugar mix, reserving some for the top.

Bake 350 for 55 minutes. Allow your bread to cool completely in the pan before you remove it.
